Need: Cajun Shrimp Seasoning Mix; 1 lb medium uncooked shrimp (shelled
& cleaned); 1/2 cup chopped onion; 2 tablespoons worcestershire
sauce; 1/2 to 3/4 stick unsalted butter, thinly sliced; 1/4 lemon.
Thoroughly mix shrimp, Cajun Shrimp Seasoning Mix, onion and
worcestershire sauce. Spread shrimp mixture in single layer in cast iron
skillet or broiling pan. Distribute sliced butter evenly over mixture.
Broil in oven or saute until shrimp are pink. Turn and repeat. Squeeze
lemon over top. Serve with sliced French bread to dip in sauce as an
appetizer or as a main course with salad, vegetable and rice. Feeds 2-4.
Options: In place of shrimp, substitute scallops, oysters, clams, cubed
chicken or cubed fish. Chopped green onions and sliced mushrooms work
great as additional vegetables to cook into this dish. For a delicious
pasta cream sauce, stir in 2 tablespoons of sour cream during last 2
minutes of cooking. Easy Grilling Baste: Combine one packet or Cajun
Shrimp Seasoning Mix, 1/2 cup mayonnaise, 1 tablespoon minced garlic, 1
tablespoon lemon juice. Mix well and refrigerate for 30 minutes to let
flavors blend. Baste seafood before and during grilling.
